About the Project
This collaborative project between the University of Leicester and Everards Brewery is using brewing and food to explore stories of the past. Beer has been consumed from prehistoric times to the present day, and its ingredients, production and consumption reflect wider changes in society, technology and culture. Drawing on archaeological evidence from sites excavated by ULAS across Leicestershire, we are creating four beers inspired by the Iron Age, Roman, Medieval and Post-medieval periods, paired with foods that help bring each era to life. Together, these brews tell a story of both continuity and change, showing how beer has evolved alongside the people who brewed and drank it. The final stop on this journey is Everards’ iconic Tiger ale, demonstrating how today’s brewing traditions in Leicestershire are rooted in centuries of innovation and local heritage.
